Mill Farm Strawberries

Elderflower and Strawberry Jelly (serves 6-8)

1 lemon halved

1 litre water

6 tbsp sugar

Elderflower cordial


16 small sheets or 8 large of gelatine, soaked in cold water 600g strawberries halved

Put lemon in a pan & squeeze then add water and sugar. Bring to boil, remove from heat and add cordial.

Squeeze water from gelatine and add to liquid & stir. Pour a little into a 20cm cake tin or mould and leave to set in fridge for 20 mins. Scatter strawberry halves over base nearly submerged in jelly mixture, leave to set again. Add more strawberries plus jelly mixture to cover and leave for 1hr. Turn out and serve with clotted cream.
